About Blue Shimeji mushrooms

Blue Shimeji (Pleurotus ostreatus) produces dramatic, deep blue-grey to charcoal clusters that fan out in tight, overlapping shelves. The appearance is more striking than the pale Pearl Oyster, and the flavour follows suit — slightly nuttier and more complex, with the same silky texture that makes oysters so satisfying to cook with.

"Shimeji" refers to the clustered, clumped growth habit — each harvest arrives as a beautiful dense bouquet of caps that hold together well for presentation. They're excellent sautéed whole, torn into pasta, or kept as intact clusters for a dramatic plate.


How it grows

Blue Shimeji is a cool-weather grower, performing best at 14–20°C — making it a natural autumn and winter kit across most of Australia. Like all oysters, it's fast to fruit: expect pins within 5–10 days of opening and misting. Multiple flushes are possible — rest the block for a week between harvests.
