There are two reasons people seek out fresh Lion's Mane. The first is that it's one of the most remarkable things you can cook with — a mushroom with the flavour and texture of fresh crab or lobster when hit with butter and heat. The second is what it may do for your brain. Both are excellent reasons.
Our fresh Lion's Mane mushrooms are grown on our farm in the Tamborine Mountain highlands and harvested to order. What arrives at your door is as fresh as it gets.
In the kitchen
Lion's Mane (Hericium erinaceus) has a seafood-like flavour — often described as reminiscent of crab or lobster — with a dense, meaty, pull-apart texture that makes it exceptional as a centrepiece dish rather than a side. The best preparation is simple: slice thickly, press gently to remove excess moisture, and cook in a hot pan with butter until golden on each side. It browns deeply, holds its shape, and tastes like the sea.
It also works beautifully pulled apart and used as a plant-based alternative to crab in tacos, sandwiches, or cakes — the texture holds up better than most mushrooms under that treatment.
As a functional food
Lion's Mane contains compounds called hericenones and erinacines that are the subject of growing scientific interest for their potential to support Nerve Growth Factor (NGF) production. NGF is the protein involved in the growth and maintenance of neurons — which is why Lion's Mane has earned its reputation as the original "brain food" mushroom and a genuine functional food, not just a wellness trend.
Fresh mushrooms retain the full spectrum of these compounds in their intact form — something powdered supplements can't guarantee.
Storage
Store in the compostable container or a paper bag in the main fridge compartment (not the crisper). Best used within 5–7 days of delivery. Avoid washing until ready to cook. If you have more than you can use fresh, slice and pan-fry to golden, then freeze.

We ship our gourmet mushrooms Monday – Wednesday via AusPost Express to ensure they never spend a weekend in a warehouse.
Safe & Chilled: Each order is tucked into a breathable paper punnet (no slime!) and shipped inside a foil-insulated bag with a reusable ice pack inside a cardboard box to protect the contents.
Delivery Zones: Currently serving Metro areas in QLD, NSW, and VIC.
