A striking hybrid of the king oyster and oyster mushroom, Shimofuri mushrooms—also known as Black Pearl King Oyster—offer the best of both worlds: a rich, savoury depth of flavour and a tender, meaty texture.

With their velvety speckled grey-brown to black caps and thick, juicy stems, they shine in a wide range of dishes, from simple sautés to hearty braises.

Pan-Seared “Steaks”
• Slice thick pieces and sear until golden and crispy on the edges
