Not all oyster mushrooms are equal, and the Italian Oyster knows it. While most varieties are strictly cool-weather growers, this one plays nicely across a wider temperature range — making it one of the most dependable kits in the range for growers in warmer parts of Australia.
Our Organic Italian Oyster Mushroom Grow Kit is made on our Tamborine Mountain farm using locally grown spawn and certified organic substrate. Everything's in the box — just open, mist, and watch it go.
About Italian Oyster mushrooms
Italian Oyster (Pleurotus pulmonarius), also known as Phoenix Oyster, produces smooth, cream to pale brown fan-shaped clusters with a mild, clean flavour and silky, tender texture. It's one of the most versatile oysters in the kitchen — excellent in stir-fries, pasta, and risotto, and outstanding simply sautéed with butter and herbs. The flavour is delicate enough to let the mushroom shine, but substantial enough to hold its own alongside bold ingredients.
Unlike Pearl Oyster which strongly prefers cool conditions, Italian Oyster will happily fruit across a wider range — tolerating temperatures up to around 27°C — making it an excellent choice for subtropical Queensland kitchens and growers in warmer coastal regions.
How it grows
Italian Oysters are fast and forgiving. Expect pins within 5–10 days of opening and misting your kit, with full harvest ready shortly after. The clusters grow in generous, tightly packed formations and the kit is good for multiple flushes — rest it for a week between harvests and it'll keep producing.
Ideal fruiting temperature: 18–27°C. Mist lightly morning and evening, keep out of direct sun, and ensure good airflow. That's it.
