WHY LION'S MANE?

Grow the World's Most Fascinating Mushroom — Right on Your Kitchen Bench

The Lion's Mane 'Pom Pom' Kit from Kai Kai Farm is your all-in-one introduction to growing a gourmet and functional mushroom that tastes like crab, looks like a work of art, and has science backing its brain-health benefits. No experience needed.

  • 🦁 Ready to Grow in Minutes — First Harvest in 14–21 Days

Your kit arrives fully colonised with live Lion's Mane mycelium — all the slow, technical work is already done on our farm. Cut the bag, mist twice daily, and within 2–3 weeks you'll be harvesting your first flush of cascading white 'pom pom' mushrooms. No setup, no mixing, no specialist knowledge required. Just cut, mist, and watch.

  • 🧠 The Functional Mushroom — Brain & Nerve Health

Not Just Delicious — One of the Most Studied Functional Mushrooms on Earth

Lion's Mane (Hericium erinaceus) contains unique bioactive compounds called hericenones and erinacines, which research suggests can stimulate Nerve Growth Factor (NGF) production — supporting brain cell growth, cognitive function, memory, and focus. It's the only edible mushroom known to support the nervous system in this way, making it a favourite among those interested in natural brain health support. Grow it fresh and eat it straight from your own bench.

  • 🌿 100% Organic — No Sprays, No Chemicals

Made from hardwood, organic wheat bran, and locally grown organic mushroom spawn (Hericium erinaceus). No pesticides, no synthetic additives — just clean, living substrate from our farm in the Scenic Rim.

  • 🇦🇺 Grown on Tamborine Mountain, QLD

Every kit is inoculated and colonised right here on Kai Kai Farm. You're not buying a mass-imported kit — you're buying a fresh, farm-cultivated block from a family business that uses these exact kits themselves.

  • 🔁 Multiple Flushes — 2 to 4 Harvests Per Kit

Most kits deliver at least 2 full flushes, and with the soak-and-flip method between crops, many customers achieve 3 or 4 harvests. Every flush is fresh, organic Lion's Mane grown at home.

  • 🎁 Perfect Gift for Foodies, Kids & Curious Growers

Watching Lion's Mane develop from a cut block to a spectacular pom pom is genuinely magical — especially for kids. It makes an outstanding gift for home cooks, health-conscious friends, or anyone who loves something a little different.

  • 🍂 Ideal for Summer, Autumn, Winter & Spring in Australia

Lion's Mane thrives at 16–24°C, making it perfectly suited to the cooler months in most Australian regions. No need for special equipment — a shaded spot on your kitchen bench is all it takes.

  • 📧 Grow Guarantee + Free Email Support

Every kit comes with our grow guarantee and direct email support from our growing team. If your kit isn't performing after 3 weeks, reach out and we'll make it right — no fuss.

🍽 Flavour, Texture & Culinary Uses

Lion's Mane is one of the most exciting culinary mushrooms you can grow at home.

  • Flavour

Mild, slightly sweet, and distinctly seafood-like — most often compared to crab or lobster. Subtle enough to absorb sauces and seasonings beautifully.

  • Texture

Tender but satisfyingly meaty when cooked. Shreds like pulled pork, slices cleanly as a steak, or tears into chunks for soups and stir-fries.

  • Best Uses

Sautéed in butter with garlic, grilled as a whole steak, shredded in tacos or crab cakes, blended into creamy soups, or added to risotto.

  • 1 Cut the box and bag

Find a shaded, ambient-lit spot (bathroom or kitchen bench works well). Cut out the cardboard around the dotted line, then make a horizontal slit across the bag with a clean knife — it's OK to cut 3–4mm into the substrate to shock the mycelium into fruiting. Use the included IPA wipe to clean the plastic and the knife before cutting.

  • 2 Mist daily

Mist the outside of the plastic 2–3 times a day. Once you see pinning or a colour change, gently lift the flap and mist underneath too. Keep the cut area moist — not soaking.

  • 3 Harvest

When cascading white spines are well developed, grip the base and twist the whole cluster off. First harvest is usually within 14–21 days of opening.

  • 4 Repeat for more flushes

Rest the kit for 2 days, soak cut-side down in cold water for 2 hours, then flip and cut from the opposite side. Repeat for flush 2, 3, and sometimes 4.

Frequently Asked Questions

Lion's Mane Mushroom Kit — All Your Questions Answered

Everything you need to know about growing, harvesting, cooking, and getting the most from your Kai Kai Farm Lion's Mane Kit.

Getting Started

Collapsible content

Is this kit suitable for complete beginners?

Absolutely. The kit arrives fully colonised with live mycelium — all the hard work is already done on our farm. You simply cut the bag, mist twice daily with the included spray bottle, and wait. No prior experience, no specialist equipment, and no mixing or measuring required. Most customers have fresh mushrooms on their bench within 14–21 days.

How long does it take to grow Lion's Mane mushrooms?

Your first flush typically appears within 14–21 days of opening and cutting the bag. Once pinning begins, mushrooms grow quickly — usually ready to harvest within 7–14 days of the first signs of growth. Speed depends on temperature (faster in warmer conditions between 18–24°C) and how consistently you mist.

How many harvests will I get from one kit?

Most kits produce at least 2 flushes (harvests), and with good care — including soaking the block between flushes and cutting from the opposite side for the second crop — many customers get 3 to 4 flushes. Each successive flush is typically slightly smaller than the last. The spent substrate can then be composted or added directly to your garden bed.

Troubleshooting

Collapsible content

Why hasn't my kit started growing after 2 weeks?

If no pins appear after 2 weeks, the most common causes are insufficient humidity or cool temperatures. First, try soaking the bag with the cut side down in cold water for 2 hours, then return it to the box — this often kickstarts fruiting. If there is still no growth after 3 weeks, email hello@kaikaifarm.au with a photo and our team will work with you to find a solution. All kits come with a grow guarantee.

Why are my mushrooms turning yellow or brown?

Yellowing or browning is almost always caused by low humidity or overripeness. If mushrooms look dry, increase misting frequency immediately and consider making a simple humidity tent. If the mushrooms are well-developed, browning can also mean they're ready — or slightly past ready — to harvest. Mushrooms that have just started to brown are still perfectly safe to eat; harvest them promptly and cook fresh.

Harvesting & Second Flushes

Collapsible content

When and how do I harvest Lion's Mane mushrooms?

Harvest when the cascading white spines are well developed and before they start to yellow or brown. You may notice a fine white dust (spores) beneath the fruiting body — another sign it's ready. To harvest, grip the base and gently twist and pull the entire cluster away from the substrate in one motion. Alternatively, use a clean knife to cut at the base. Don't leave it too long — once browning begins the texture and flavour deteriorate.

How do I get a second or third flush from my kit?

After your first harvest, let the kit rest for at least 2 days. Then remove the bag from the box and submerge it cut-side down in cold clean water for 2 hours to rehydrate the substrate. Drain thoroughly, return to the box, and this time cut a new slit on the opposite side of the bag. Resume misting 2–3 times daily. A second flush should appear within 10–20 days. Repeat this process for a possible third flush. After that, the spent substrate makes excellent garden compost.

Cooking & health

Collapsible content

What does Lion's Mane taste like and how do I cook it?

Lion's Mane has a mild, slightly sweet, seafood-like flavour often compared to crab or lobster — making it one of the most exciting culinary mushrooms available. It has a satisfying meaty texture that shreds, slices, and tears beautifully. Best cooked sautéed in butter with garlic, grilled whole as a steak, shredded in tacos or crab cakes, or added to soups and risottos. Cook over medium-high heat and avoid overcrowding the pan to get a good golden sear.

What are the health benefits of Lion's Mane mushrooms?

Lion's Mane (Hericium erinaceus) is one of the most studied functional mushrooms. It contains bioactive compounds called hericenones and erinacines, which research suggests can stimulate Nerve Growth Factor (NGF) production — supporting brain cell growth, cognitive function, memory, and focus. It's the only edible mushroom known to act in this way on the nervous system. It's also used traditionally to support digestive health and immune function. Note: our kit is sold as a culinary product; consult a healthcare professional for specific health advice.

Disposal

Collapsible content

What can I do with the kit once it's finished fruiting?

The spent mushroom substrate is a fantastic garden amendment — simply empty the contents of the bag into your compost pile, garden bed, or around the base of trees. You may even find some mushrooms continue to grow! The cardboard box is fully compostable. Only the plastic grow bag needs to go in the regular bin.
