Clean, elegant, and consistently productive. Silver Shimeji (Pleurotus ostreatus) produces silvery-grey clusters with a mild, clean flavour profile that sits between the delicacy of Snow White and the depth of Blue Shimeji. For growers supplying restaurants or premium box subscriptions, Silver Shimeji's neutral but beautiful appearance makes it a versatile addition to any mixed harvest display — complementing bolder-coloured varieties without competing with them.

Yield and harvesting: One of the most productive oyster varieties in the range, with strong performance across all four flushes. Bulk pricing is available from 10 blocks, making it particularly well-suited to commercial growers looking for a reliable high-yield cool-season variety. Harvest clusters when tightly formed and caps are flat; holds 5–7 days refrigerated.

In the kitchen: Mild, clean, subtly savoury — a mushroom that works in any context where it's meant to support rather than dominate a dish. Excellent in cream sauces, pasta, egg dishes, and light Asian preparations. The silver-grey colouring adds a sophisticated, natural tone to plate presentations.

Growing conditions: 14–20°C — cool-weather variety, best in autumn through spring. Fast and forgiving, with strong flush performance across all four harvests.

Express post and bulk ordering

We strongly recommend express post during summer months to minimise heat exposure in transit. Add the Express Post Addon to your order with a quantity matching your block count. Orders of 4 or more blocks of an individual variety are made to order and may take up to 2 weeks (3 weeks for Pioppino and Reishi). We'll confirm your estimated shipping date once the order is placed.

Storage and handling

If you can't fruit immediately, store in a cool, dark place under 18°C for up to 2 weeks. Handle gently — the mycelium is alive and ready to fruit.
