Warning: once you grow Pink Oysters, you won't be able to stop showing them off. These blazing coral-pink clusters are one of the most visually striking things you can grow on a kitchen bench — and they fruit so fast it feels almost theatrical.

Our Organic Pink Oyster Mushroom Grow Kit is made on our Tamborine Mountain farm using locally grown spawn and certified organic substrate. It's the perfect summer grow kit for warm Australian climates.

About Pink Oyster mushrooms

Pink Oyster (Pleurotus djamor) is a tropical species — vivid pink to coral-orange in colour, with a distinctive floral, slightly fruity aroma when raw. In the kitchen, they transform completely: cooked hot and fast in a dry pan or with butter, they develop a savoury, almost bacon-like depth of flavour that makes them genuinely surprising. Toss them through noodles, fold them into tacos, or crisp them up as a plant-based topping — they hold their own in any dish.

One thing to know: Pink Oysters are more delicate post-harvest than pearl varieties. They're best used within a day or two of picking while the colour and texture are at their peak.

Australia's summer mushroom kit

Most mushroom kits struggle in the heat of a Queensland or Northern Territory summer. Pink Oyster thrives in it. With an ideal fruiting temperature of 22–30°C, this is the kit to reach for when the weather is warm and your other blocks are resting. It pins fast — often within 3–5 days of opening — and produces impressive, densely clustered flushes.

If you're in a cooler part of Australia, Pink Oysters do best indoors in the warmer months.

What's in the kit

A fully colonised organic substrate block inoculated with our Tamborine Mountain-grown Pink Oyster spawn, packaged in a grow bag with clear instructions. Open, mist, watch the magic happen. The block is good for multiple flushes — rest it for a week between harvests for best results.

The Kai Kai Farm difference

Made fresh on our farm in the highlands of Tamborine Mountain — locally grown spawn, certified organic substrate, packed to order. Backed by our grow guarantee. If it doesn't fruit, we'll make it right.
