
If there's one mushroom that's earned its place in every serious kitchen, it's Shiitake. Deep, smoky, intensely umami — with a meaty texture that holds up to high heat, long braises, and strong flavours without disappearing. Our farm-grown, no-spray Shiitake is harvested to order from our Tamborine Mountain operation.
Why fresh Shiitake is different
Most people encounter Shiitake dried, which concentrates the flavour into something almost too intense for direct eating. Fresh Shiitake is a different experience entirely — the same deep umami and smoky complexity, but with a juiciness and texture that dried mushrooms simply can't replicate. Sear them in a hot pan and they develop a rich, caramelised crust. Braise them slowly and they absorb the surrounding flavours while contributing their own.
Shiitake (Lentinula edodes) is also one of the most studied culinary-functional mushrooms — containing lentinan, a well-researched beta-glucan associated with immune support. You're cooking with something that's been valued in East Asian cuisines for over 1,000 years for very good reasons.
Ways to use them
The applications are almost limitless. Slice and sauté with garlic and butter for a simple side. Add whole caps to ramen or miso broth. Use in stir-fries, fried rice, pasta, and risotto. Grill whole on the BBQ — the stems especially benefit from direct heat. Shiitake caps also make an outstanding base for stuffed mushroom recipes, holding their shape where softer varieties collapse.
The stems are tougher than the caps and best used for stocks and broths rather than direct eating — but they're full of flavour and shouldn't be wasted.
Storage
Store in a paper bag or the compostable container provided, in the main fridge compartment. Best used within 5–7 days. Avoid washing until ready to cook — wipe with a damp cloth instead to preserve the texture.
