About Snow White Oyster mushrooms
Snow White Oyster (Pleurotus ostreatus) is a white-pigmented strain of the classic Pearl Oyster — same species, distinctly different look. The flavour is clean, mild, and delicately savoury, with the silky tender texture that makes oyster mushrooms so versatile in the kitchen. Where its grey and blue cousins add earthy colour to a dish, Snow White adds brightness and elegance.
Its appearance makes it a favourite for presentation-focused cooking: add it to light-coloured pasta, cream sauces, or delicate Asian broths where you want the mushroom to be seen, not hidden. It also photographs exceptionally well for anyone who cooks for an audience.
How it grows
Snow White is a cool-weather grower, fruiting best at 14–20°C — ideal for autumn, winter, and spring across most of Australia. Fast to pin (typically 5–10 days from opening), generous in yield, and capable of multiple flushes per block. Mist lightly twice daily, give it indirect light and airflow, and you're done.
