In a seafood risotto, a cream sauce, or a delicate Asian broth, Snow White adds brightness rather than the earthy grey of standard oysters, making it a preferred variety for presentation-focused chefs and premium box sales.
Yield and harvesting: 500–600g on first flush, with up to 4 harvests per block — matching the best yields in the oyster range. The tight fan-shaped clusters hold together well for harvest and handling. Harvest when caps are fully developed and edges are still flat — pre-curl is the peak harvest window. Snow White holds 5–7 days refrigerated when kept dry and undamaged.
In the kitchen: Clean, mild, delicately savoury flavour with the silky tender texture of oyster varieties. The white colouring makes it ideal for dishes where you want the mushroom seen rather than absorbed into a sauce — cream pasta, pale risotto, delicate egg dishes, and Asian preparations. It also photographs exceptionally well against dark plating.
