Cooking Ideas

To unlock the "goodness" within the woody fibers, Turkey Tail requires a slow steep.

Measure: Add 5–10g of dried Turkey Tail to 500ml of water.

Simmer: Bring to a boil, then reduce heat and simmer (decoct) for 20–30 minutes.

Enhance: The flavour is mild, making it a perfect base. Add a slice of ginger, a stick of cinnamon, or a teaspoon of local honey.

Re-use: Don't throw them away after one boil! These hardy mushrooms can often be steeped 2–3 times before losing their pigment.
