About Yellow Oyster mushrooms
Yellow Oyster (Pleurotus citrinopileatus), also known as Golden Oyster, produces clusters of vivid lemon-yellow to golden caps with a mild, subtly sweet and nutty flavour. The texture is delicate and tender — more so than Pearl Oyster — which makes it best suited to quick cooking methods: a brief sauté, tossed into a soup at the last moment, or scattered over rice dishes. Don't overcook them — their delicate nature is part of their charm, and the colour fades fast with too much heat.
They photograph beautifully, which doesn't hurt.
A warm-weather favourite
Yellow Oysters prefer warmer conditions — 22–28°C is the ideal range — making them a natural companion to Pink Oyster as a summer growing option across Queensland and northern Australia. They fruit fast (often pinning within 4–7 days of opening), produce generous clusters, and reward growers with multiple flushes from a single block.
