Most people know Lion's Mane as the dense white pompom — the one that looks like a snowball on a branch. The Snowflake is different. Where Hericium erinaceus forms a tight, singular globe, Hericium coralloides — the Coral Tooth or Snowflake — branches outward in a cascade of fine white spines, like frozen coral or a tiny ice crystal magnified. It's genuinely one of the most beautiful fungi you can grow at home.

Our Organic Lion's Mane 'Snowflake' Mushroom Grow Kit is made on our Tamborine Mountain farm using our own Hericium coralloides spawn and certified organic substrate.


Snowflake vs Pom Pom — what's the difference?

Both are Hericium species and both are studied for similar brain-health properties, but they're distinct mushrooms with different growth habits and appearances. H. coralloides grows as a branching, coral-like structure — open, spreading, and intricate. H. erinaceus grows as a single dense globe. If you already have a Pom Pom kit, the Snowflake is its fascinating counterpart — and comparing them is one of the joys of home cultivation.


Functional properties

Like its close relative, Lion's Mane 'Snowflake' contains hericenones and erinacine-related compounds that have drawn scientific interest for their potential to support Nerve Growth Factor (NGF) production — the protein involved in maintaining healthy neurons. It has the same brain food reputation, in a more visually dramatic package.

In the kitchen: the flavour is similar to Pom Pom — mild, seafood-like, slightly sweet. Sauté in butter over high heat to develop its best flavour. The texture is slightly more delicate than the dense Pom Pom, so it benefits from a gentler approach: less stirring, more time in the pan.


Growing conditions

Snowflake Lion's Mane prefers cool, humid conditions — ideal fruiting temperature is 15–20°C, making it best suited to cooler months across most of Australia. Like all Hericium species, it's sensitive to CO₂ — good airflow is essential to encourage the branching form rather than elongated, stringy growth. First pins typically appear within 10–18 days.

Mushroom Profile

• Appearance: Delicate, icicle-like spines forming cascading, coral-like branches; whiter and more feathery than standard Lion’s Mane (H. erinaceus).
• Flavour: Mild, slightly sweet and seafood-like—often compared to crab or lobster.
• Culinary Uses: Excellent sautéed, grilled, in soups or shredded as a meat substitute in crab cakes, tacos, or stir-fries.

Growing Information

• Temperature: Thrives in temperatures between 16-24°C, with the ideal range being 18-21°C making them a perfect kit for autumn, winter and spring.
• Light: Prefers ambient light; avoid direct sunlight.
• Humidity: Maintain humidity by misting the kit twice daily.
