About Pearl Oyster mushrooms

Pearl Oyster (Pleurotus ostreatus) is the classic gourmet oyster — pale grey to beige fan-shaped clusters with a mild, delicate flavour and silky, tender texture. In the kitchen, they're incredibly versatile: beautiful in a stir-fry, luxurious tossed through pasta, and outstanding simply pan-fried in butter with garlic and a pinch of salt.

They're also one of the most nutritious mushrooms you can eat — high in protein, B vitamins, and beta-glucans that support a healthy immune system.


How fast does it grow?

Fast. Really fast. Once conditions are right, Pearl Oysters can pin (form their first tiny clusters) within 3–7 days of opening and misting your kit. Full harvest is typically ready within 5–10 days of first pins. It's genuinely one of the most rewarding things to watch grow on your kitchen bench.

Your kit will produce multiple flushes — rest the block for a week between harvests and it'll reward you again. Most growers get 2–3 solid flushes from each kit.


Ideal growing conditions

Pearl Oysters prefer cooler temperatures — 16–22°C is the sweet spot — making them an excellent autumn, winter, and spring grow across most of Australia. They'll still fruit in warmer conditions, but they'll perform best when nights are cool. A light misting morning and evening, indirect light, and good airflow is all the care they need.
